<p>On entend de plus en plus souvent parler de <em>bains de forêt</em>, de <em>sylvothérapie</em>, de <em>prescriptions vertes,</em> ou encore <em>d’ordonnances nature</em>. Plus que des tendances «&nbsp;lifestyle&nbsp;», ces pratiques ont des racines culturelles très anciennes partout dans le monde. En effet, l’idée que la nature soigne, équilibre ou élève les êtres humains n’est pas nouvelle. Ce qui est nouveau, c’est que nous disposons maintenant de preuves scientifiques concrètes des bienfaits de ces pratiques ancestrales sur le bien-être et la santé. Plus qu’une mode, il s’agit donc plutôt de la redécouverte, validée scientifiquement, d’une intuition universelle.</p>



<p>Kathy Willis, professeure de biodiversité à l’Université d’Oxford a récemment publié «&nbsp;Naturel&nbsp;», un livre qui rassemble toutes les découvertes scientifiques récentes sur la manière dont le fait de voir, sentir, goûter, entendre, toucher la nature peut améliorer notre vie, notre bien-être et notre santé.</p>



<p>Elle révèle aussi qu’au-delà du contact avec la nature, sa simple <em>évocation</em>, par des indices symboliques ou visuels, améliore déjà notre santé et notre bien-être : le fait d’admirer un bouquet de fleurs en papier ou de toucher un meuble en bois a déjà des effets prouvés sur le stress, l’activation du système parasympathique, et la récupération cognitive..</p>

				<p>Cette infusion peut se boire chaude ou froide. Une infusion longue permet d’extraire davantage de minéraux et donne une boisson particulièrement reminéralisante.</p>
<p>On peut également macérer à froid pendant 4h à 12h, pour obtenir une boisson plus fraîche, plus douce et très agréable gustativement.</p>
<p>Le citron apporte une note vive qui équilibre parfaitement le côté “vert” de l’ortie.</p>

<p>Les plantes sauvages comestibles, longtemps reléguées au rang de simples “mauvaises herbes”, retrouvent aujourd’hui une place de choix dans nos assiettes. Ortie, pissenlit, plantain, ail des ours, pourpier ou mouron des oiseaux, toutes ces plantes oubliées regorgent de saveurs, de minéraux et de précieux nutriments protecteurs.</p>



<p>Dans les régions méditerranéennes, ces herbes sauvages faisaient traditionnellement partie de l’alimentation quotidienne et, notamment du célèbre régime crétois, reconnu pour ses bienfaits pour la santé.</p>



<p>Parmi toutes ces plantes sauvages, <strong>l’ortie occupe une place à part</strong>. Les herboristes disent souvent que s’il ne devait rester qu’une seule plante sauvage, ce serait l’ortie, et ce n’est pas un hasard!</p>



<p>Derrière son caractère piquant se cache une plante <strong>exceptionnellement nutritive et reminéralisante</strong>. L’ortie est naturellement <strong>riche en fer, calcium, magnésium, silice, vitamines et oligo-éléments</strong>. Depuis des siècles, elle accompagne l’organisme en période de fatigue, de changement de saison ou de convalescence.</p>



<p>Grâce à sa richesse minérale, <strong>elle aide à soutenir les os, les articulations, les cheveux et les ongles</strong>, tout en apportant un véritable coup de vitalité. Elle est également traditionnellement reconnue pour ses <strong>propriétés drainantes et dépuratives</strong>.</p>



<p>L’ortie est également remarquable par sa <strong>richesse en protéines végétales de qualité : elle contient tous les acides aminés essentiels</strong>, ce qui est relativement rare dans le monde végétal. </p>



<p>Mais l’ortie est aussi une formidable plante culinaire. Une fois cuite ou mixée, elle perd totalement son pouvoir urticant et révèle une <strong>saveur végétale douce</strong>, proche de l’épinard, avec parfois une légère note de noisette et une profondeur presque “verte” rappelant certains thés ou légumes sauvages.</p>



<p>En cuisine, on privilégie les jeunes pousses et les sommités cueillies avant floraison, plus délicates en texture et en saveur.</p>



<p>Sa saveur s’accorde merveilleusement avec l’ail des ours, les pommes de terre, les fromages frais, les graines et fruits secs, les œufs, les champignons ou encore les légumineuses. Elle peut se cuisiner de multiples façons : en soupe ou velouté, en pesto, en quiche, dans des pâtes fraîches, en omelette, en risotto, en galettes végétales ou même en infusion reminéralisante.</p>



<p>L’ortie mérite largement de retrouver sa place dans nos cuisines: <strong>une plante locale, abondante, savoureuse et incroyablement nourrissante</strong>, qui pousse souvent juste sous nos yeux.</p>

<p>Bien que l’espérance de vie moyenne des Belges s’élève à 84,4 pour les femmes et à 79,5 ans pour les hommes, l’espérance de vie <em>en bonne santé</em> n’avoisine que 64 ans, tous sexes confondus, donnant respectivement 20 et 15 ans de vie avec incapacités.</p>



<p>Or, ce n’est pas tant la maladie qui nous fait vieillir, que le vieillissement qui est source de maladies chroniques et dégénératives, même si ces phénomènes sont intimement liés. Si l’on veut vivre longtemps, <em>en bonne santé</em>, il faut tout faire pour ralentir le vieillissement !</p>

			<p id="instruction-step-1" class="MsoNormal">Éplucher et couper les légumes : carottes, navets et pommes de terre en morceaux. Émincer l’oignon et hacher l’ail.</p>
<p id="instruction-step-2" class="MsoNormal">Faire chauffer l’huile d’olive dans une cocotte. Ajouter l’oignon et les champignons, puis faire revenir jusqu’à ce qu’ils soient bien dorés.</p>
<p id="instruction-step-3" class="MsoNormal">Ajouter l’ail, le concentré de tomate et la sauce soja. Mélanger pendant 1 minute.</p>
<p id="instruction-step-4" class="MsoNormal">Ajouter les lentilles, les carottes, les navets et les pommes de terre. Bien mélanger.</p>
<p id="instruction-step-5" class="MsoNormal">Verser le bouillon de légumes. Ajouter le thym et le laurier.</p>
<p id="instruction-step-6" class="MsoNormal">Porter à ébullition, puis laisser mijoter à feu doux pendant 30 à 35 minutes, jusqu’à ce que les lentilles soient tendres.</p>
<p id="instruction-step-7" class="MsoNormal">Ajouter les petits pois 5 minutes avant la fin de la cuisson.</p>
<p id="instruction-step-8" class="MsoNormal">Ajuster l’assaisonnement avec sel et poivre. Ajouter un filet de jus de citron si souhaité.</p>

			<p id="instruction-step-1" class="MsoNormal">Laver les asperges et couper la base si nécessaire.</p>
<p id="instruction-step-2" class="MsoNormal">Cuire les asperges à la vapeur pendant 5 à 6 minutes, jusqu’à ce qu’elles soient tendres mais encore légèrement fermes.</p>
<p id="instruction-step-3" class="MsoNormal">Pendant ce temps, préparer la sauce : mélanger le yaourt avec le jus et le zeste de citron, l’huile d’olive, le sel et le poivre.</p>
<p id="instruction-step-4" class="MsoNormal">Concasser grossièrement les noisettes ou les amandes, puis les faire griller à sec dans une poêle pendant 2 à 3 minutes.</p>
<p id="instruction-step-5" class="MsoNormal">(Optionnel) Cuire les œufs mollets : plonger les œufs dans l’eau bouillante pendant 6 minutes, puis les refroidir dans l’eau froide avant de les écaler.</p>
<p id="instruction-step-6" class="MsoNormal">Dresser : étaler la sauce au fond de l’assiette, disposer les asperges par-dessus.</p>
<p id="instruction-step-7" class="MsoNormal">Ajouter les noisettes grillées, les herbes fraîches et, si souhaité, un œuf mollet coupé en deux.</p>
<p id="instruction-step-8" class="MsoNormal">Terminer avec un filet d’huile d’olive et un peu de zeste de citron.</p>
